I have alot of roast leftover from last night. Any suggestions on what to do with it tonight for dinner? I'm out of ideas for some reason.

Sorry, Cindy!

As you may know by now, me and cooking and giving recipe advice is a complete no- go. It's not that I Can't cook... it's just that I don't want to. (did I just sound like an-almost-30 year old-teenager there?!)

Good luck, and let me know what you did with the roast! I was hungry before reading this post, and now my tummy is screaming at me to think about lunch!

MM Cindy! What about stew? I pretty much always just have things as they were the previous night but with a roast you can make stew.....not sure what else. lol

That isn't a bad idea. I'm leaning toward a hash a friend suggested, but making it with sweet potatoes. Sounds yummy.

Cindy,

Here are a couple of thoughts...

Chop it up and serve over baked potatoes, noodles, or rice.

Chop it up, mix it with al dente pasta, throw it in a baking dish, top with bread crumbs, and have a casserole.

1) BBQ Beef: Shred the meat, add BBQ sauce, and reheat. Serve it on toasted buns or as a side with FF or mashed potatoes and a salad.

2) Toasted Sandwiches: Toast garlic cheese bread (make your own or buy out of the freezer section), slice the beef on top to make incredible sandwiches.

3) Stew: Toss the left over roast in a crock pot. Add a can of fire-roasted tomatoes, some beef stock, and leftover veggies from the freezer or fridge. It can also be done on the stove.

My mom used to make hash from leftover roast when we were kids. My brother and I loved it and called it "dog food". It was funny when we would tell the neighbors we had "dog food" for dinner. Mom was horrified. Big Grin

Oh man! These recipe ideas sound FANTASTIC!!! I throw out left over roast all the time. Embarrassed What a waste!

Liz, your "dog food" meal cracked me up! At DH's Mom's house, they make a meal that everyone affectionately calls "Snotty Chicken." And it really does look like it sounds! My kids think it's hilarious to tell everyone they ate snotty chicken for dinner. Gross but silly!

I'm adding these ideas to my cookbood right now!!

Thank you EVERYONE for your suggestions. I'm sure we can all relate to the dinner making decision being overwhelming sometimes. Today was that day for me.

I think I'm going with the garlic bread sandwiches and a salad. Easy and tasty. I love garlic bread. I could eat that and a glass of milk for dinner and be happy.

I don't like leftover roast beef at all. But I don't see why you couldn't cut it up and add it to a stir-fry, like you can with leftover steak.
