I have found that non-fat cheese is a trigger for me. I can eat any other type of cheese. Does anyone know what could be in this cheese that would be a trigger?

Really, just about anything we might possibly ingest has the potential to be a trigger for someone or another. And it could be just about anything in the substance, really. Usually with cheeses I think the suspected culprit is usually enzymes, but there really isn't anything out there to definitively pin triggers to specific components of any one food. It's a complex chemical process, and that's just really tough to sort out. Fortunately, we don't have to know all the bell and whistle details. If you know that every time you've eaten a certain thing, you've triggered, all you have to do is just generally avoid it.

Hi mpq,
My understanding is that it has to do the the aging process of the cheese. I know my former doctor always told me to stay away from any cheeses that were aged - the sharper the cheese, the greater the trigger. Of course, I have no understanding of the chemistry of that!
