I have to share this healthy idea I found. We are trying to incorporate more of a variety of veggies in our diet these days:

Toss fresh veggies (broccoli, califlower, sweet potatoes)with garlic-infused olive oil (smashed garlic and olive oil heated a bit in the microwave), rosemary, thyme, sea salt and fresh pepper.

Roast in the oven 450 degrees for 20 min. Toss. Continue roasting at 500 degrees for 10 min. Toss with a bit more of the olive oil and a squeeze of fresh lemon or lime.

We ate most of it directly off the pan before we added it to some pasta (with olive oil, lemon juice, and a little pasta water).

Of course, use whatever fresh veggies you like best. Eggplant & cherry tomatoes? Mushrooms and asparagus? I think this would be good with brown rice or pita bread.

That's sounds great!! I will have to try that!!

I have done something similiar with red potatoes. It makes a great side dish.

I had forgotten until I read this how great roasted veggies are. Also, if there is much liquid left and you are not putting it on pasta, save the liquid. It is wonderful to add when cooking rice or potatoes.
