Healthy Gluten Free, Refined Sugar free, Artificial sweetener free, Eggless Banana Bread

3 ripe bananas
1/4 c. olive oil
1 teaspoon vanilla
12-15 drops liquid stevia vanilla creme or plain stevia
2 c. brown rice flour
1 teaspoon Sea Salt
1 teaspoon baking soda
1 c. chopped walnuts or pecans

1 c. rice milk
1c. ground flax seeds
1 c. raisins

Mash bananas (overripe make the best bread)and rice milk. Add oil, vanilla and stevia. Mix well. Sift flour, salt and soda together and add to banana mixture with walnuts if using. Mix until flour is blended in but do not overmix.

Put into loaf pan and bake at 350 degrees F. for 45-60 minutes or until toothpick comes out clean. Cool 10 minutes in pan, then remove to rack to cool completely before cutting.

Mango Creamsickle

This recipe reminds me of the creamsickles we used to eat when I was a child, no real ice-cream in this recipe....enjoy!

This is a two step process....you must first freeze the puree then continue.
Recipe:
2 cups fresh mango pulp
2 TB or more coconut milk
2-3 drops Liquid SweetLeaf Stevia: Valencia Orange

First: Puree mango pulp and coconut milk in a blender or food processor

Second: Place mixture in ice cube trays and freeze

Third: Remove frozen mango cubes and place in a blender or food processor. Add enough coconut milk to blend the mixture and pulse until creamy. If you like very sweet add more Liquid SweetLeaf Stevia to taste.

Cooking tips: If mangoes aren't available use packaged frozen mango slices. Defrost before using.

I have an even healthier substitution for the olive oil. If you blend 3 apples, cores removed in the blender to make your own apple sauce this works even better than the oil and is much less fat. The apple sauce is also nice when you want a healthy snack and are tired of eating plain apples whole. Add some strawberries or blueberries to the apples in the blender for flavored apple sauce, this is nice around the holidays when you use fresh crannberries. You can also use coconut oil if you want a healthy substitution for other oils, this oil is the most heat resistant and is great for sauteeing vegetables and great on popcorn!

Original French Silk Pie
8 servings

This pie is just incredible! I once served it to dinner guests, and after their first bite and all the ensuing "ooos and aaaahs," I informed them that it was sugar free. Their mouths gaped open and their eyes bugged out! They said, "Well, don’t tell the kids, they will never know the difference!" The husband still talks about how wonderful this dessert is.

Ingredients
- 3 ounces (squares) unsweetened baking chocolate
- 3/4 cup butter, room temperature
- 1 teaspoon SweetLeaf SteviaPlus
- 8 packets Sweet & Slender
- 1 1/2 teaspoons vanilla
- 3 eggs

Break chocolate and place in a small saucepan over lowest possible heat. Stirring constantly, warm chocolate until almost completely melted. Remove from heat and continue to stir until thoroughly melted. Cool chocolate. Since the eggs won't be cooked, coddle eggs: Fill a small sauce pan about half-full. Bring water to boiling, then place eggs in boiling water for 20 seconds. Remove eggs from water and immerse in cold water to stop them from continuing to cook. Set aside. In a large mixing bowl with an electric mixer cream butter, SteviaPlus and Sweet & Slender on medium speed about 1 minute. Add chocolate and vanilla, mixing until combined. Continue mixing and beat in eggs one at a time for 5 minutes each. Total mixing time for egg mixture will be 15 minutes. Pour into pie crust (recipe below). Chill at least 4 hours to set.

Crust


Ingredients
- 1 cup ground almonds
- 1/2 cup soy protein (NOT soy flour!)
- 1 teaspoon SteviaPlus
- 4 packets Sweet & Slender
- 1/2 teaspoon cinnamon
- 6 tablespoons butter, room temperature

Combine well with a pastry blender or food processor and press into pie pan. Bake 5 minutes at 450 F. Cool completely before adding filling.

Topping


Ingredients
- 1 cup whipping cream
- 1/8 teaspoon SteviaPlus

Whip cream in a small mixing bowl with an electric mixer until peaks form. Add SteviaPlus and whip till combined. Spread on chilled pie. Sliver chocolate with a vegetable peeler. Garnish pie with chocolate curls. Enjoy!

Variation: French Silk Cups: Omit the crust and do the filling as instructed. Place finished filling into muffin tins and chill in the refrigerator as directed. Either top with the whipped cream topping as directed or serve plain.
